These are the questions we field every week from hosts planning events between Malibu and Pasadena. Where the answer is "it depends on your venue," we say that instead of a comfortable generality, and where something is not possible we say that too. Two to six weeks covers most bookings. Saturdays between May and October, December corporate weeks, and graduation season compress much faster, so those are worth locking early. If your date is inside a week, call rather than email — we can tell you in one conversation whether a crew and an oven are genuinely available.
Date, guest count, city or venue address, and roughly how the event runs. Access is the factor most hosts underestimate, so the address matters more than a general area. With those four details we can usually return a firm number the same business day.
A signed agreement and a deposit hold the date; a verbal hold does not. Until the deposit is in, the date stays available to other inquiries, which is the only honest way to run a calendar with a limited number of ovens and crews.
Tell us as soon as you know. Increases are usually fine with notice, since scaling means more dough and sometimes an extra crew member. Large last-minute jumps are the hardest ask, because dough is on a 48-hour schedule and cannot be conjured on the morning of an event.
Plan on a footprint roughly the size of a parking space for the oven plus an adjacent prep and pass area, with clearance overhead and a safe distance from structures and dry vegetation. Level ground matters more than square footage. If your site is tight, send photos and we will confirm what fits before you commit.
We arrive self-sufficient for cooking. What helps is a nearby standard outlet for lights or a warmer at evening events and access to water for the crew. If neither exists, say so during planning and we bring our own arrangement rather than discovering it at load-in.
Typically about two hours before service for setup and heat-up, longer where the load-in involves stairs, a freight elevator, or a hillside carry. Breakdown runs about an hour after the last pizza. Every timeline is built backwards from your first-pie time with Los Angeles traffic factored in.
Indoors and on rooftops we usually stage in an approved exterior or ground-level area and run a timed pass to the room, because most Los Angeles buildings restrict open flame above ground level. Where a building permits a compliant setup closer to guests, we take it. We never claim an approval a property has not given in writing.
Public sites are permit-driven and the host secures the permit — we cannot issue one for you. Many Los Angeles parks and beaches restrict open flame entirely. Where a permit is granted we work to its conditions; where it is not achievable in your timeline, a self-contained truck in an approved parking area is the usual alternative.
A chef from our own crew works the deck, not a subcontracted stand-in. Chef Marcus Roberto trains everyone who runs a station, which is why the pizza at a Van Nuys backyard party comes off the deck the same way it does at a Beverly Hills reception.
Yes. We carry commercial liability coverage and can issue a certificate of insurance naming your venue or property manager, which many Los Angeles office buildings and HOA venues require before load-in. Request it at least a week out so the building has time to process it.
We break down the station, remove our own equipment and waste, and leave the area as we found it. What we do not do is a general venue clean of areas we did not use — that stays with the venue or your event staff.
Rain we plan for with a covered or sheltered position agreed in advance. Red-flag fire conditions are different: we will change placement or recommend a non-flame setup rather than run a live oven near dry brush. Safety decisions are not negotiable, and we would rather have that conversation days early than an hour before service.
