Chef Marcus Roberto — a two-time world pizza champion (2017 and 2019) with 18 years of professional experience in Los Angeles — leads service personally, which is why the person who quotes your event is also the person standing at the oven.

His approach is simple: a short menu executed exactly, dough given the time it needs, and a serving pass paced so the last guest in line eats a pie as good as the first one out of the oven.

How We Work

Short menu, executed precisely

Margherita, marinara, diavola, and a rotating seasonal white pie form the backbone. A tight menu is what makes a fast pass possible without quality drifting after the first hour.

48-hour cold-fermented dough

Dough is scheduled days before your event and proofed cold. It bakes lighter, chars properly at 850°F, and holds up better on a plate than same-day dough.

Food safety, not improvisation

ServSafe-certified staff, LA County Public Health-compliant handling, temperature discipline on cold ingredients, and a dedicated stone when a gluten-free order is on the ticket.

Venue logistics settled early

Oven placement, clearance, power, load-in path, and any certificate of insurance are confirmed before event week — not discovered on the day.

What We Will Not Claim

We do not operate a Google Business Profile or a storefront, so you will not find a review wall here, and we will not invent one. What we will do is tell you plainly when a venue is a poor fit for a live oven, when your guest count needs a second pizzaiolo, or when a date is too tight for our dough schedule. Who actually cooks at my event?

Chef Marcus Roberto leads service, with a service team sized to your guest count. On smaller private events he is on the oven himself; on large volume events he runs the pass while a second pizzaiolo stretches and dresses. You are not handed off to a subcontracted crew you have never spoken to.

Are you licensed and insured for Los Angeles venues?

We operate as a mobile catering kitchen with ServSafe-certified staff and carry the liability coverage most venues ask for. Many LA venues and studio lots require a certificate of insurance naming them as additional insured — tell us the venue and we produce it as part of booking.

Do you have a storefront or dining room?

No. Everything is cooked at your venue on event day. That is deliberate: no dining-room overhead means the budget goes into dough, cheese, and staffing instead of rent.

What does your dough program involve?

A 48-hour cold ferment as standard, extending to 72 hours for larger contracts booked with enough lead time. Longer fermentation develops flavor and makes the crust lighter and easier to digest; it also means dough is scheduled days ahead, which is part of why last-minute bookings have limits.
